Los Pirineos is located in between two mountains, surrounded by volcanic activity. This micro-location provides perfect wind and sun exposure to grow and process wonderful coffees. Fertile soils are rich in organic matter.
Gilberto is obsessed with quality processing. His farm is a showcase for clean segmentation, experimenting with new variatals, drying methods and eco-friendly appliances. Every year you can taste how Gilbertos coffees are just getting better.
The farm has been owned by Gilberto´s family since 1890. They were pioneers in El Salvador to build their own Micro Mill on site. What makes this farm even more unique is their approach to quality: Small to medium batches are being segmented by different variatals and processing methods. With this they can work on specific taste characteristics in the cup.
The Mico Mill is extremely clean and Gilberto takes great pride in his processing skills. He recycles the water used during processing. The water comes from a tank where he collects rain. All pulp and mucilage is turned in to fertilizer by using californian red worms that makes it into nutrient-rich compost. The compost is later used as fertilizer for the coffee trees.
All cherries are selectively picked by hand. After soaking the coffee is dried for about 12 -14 days on raised beds covered with shade. This prolongues the drying of the coffee and helps improve the shelf life of the coffee as well as giving it a cleaner cup.
Our Bourbon Elite Microlot will be very sweet indeed with notes of nougat and red grapes. Some floral notes will give this cup a very elegant finish.
We roast Los Pirineos with an espresso profile. As with all our espressos, you can easily put them on any filter method at home. The coffees will be clean and flavoursome. We chose not to roast with two different profiles in those cases where we think we cannot bring out more qualities by having two method.
We never blend any of our coffees and sell whole beans only to keep them as fresh as possible for you. All our coffees are fresh in season and of highest grading. We make it a point to pay a premium that enables our farmers to build a sustainable business and produce a high quality product in which they take great pride.
Our coffees are roasted rather light to create a fully developed but very clean taste.
