Huila is one of our favourite regions in Colombia. It has a tropical climate, with annual rainfall of around 1500 mm / year. The coffees are culivated on rich volcanic soils leading to a diverse and complex cup profile. Guacayo is a community in the south of Hulia region near the central and west mountains.
We have chosen this particular microlot at the same time as we have selected Aromas del Sur - which is one of our main espressos right now. Both coffees were standing out massively in terms of cleanliness, sweetness and flavour. The cup is extremely balanced with notes of fudge, chestnuts and red apple.
This coffee is part of a Microlot Program created to reward quality with premium pricing. It also highlights the unique flavours that are inherent to specific micro-regions within Colombia.
Guacayo will succeed some of the other interesting Colombian microlots we have presented so far this season. We highly recommend to pair this coffee on your brewbar or at home with one of our Ethiopian and Kenyan coffees.
We never blend any of our coffees and sell whole beans only to keep them as fresh as possible for you. All our coffees are fresh in season and of highest grading. We make it a point to pay a premium that enables our farmers to build a sustainable business and produce a high quality product in which they take great pride.
Our coffees are roasted rather light to create a fully developed but very clean taste.
