Huehuetenango is one of the best coffee regions in Guatemala, known for its complex cup profiles. Finca El Mirador is a 118 hectare farm located in one of the most remote areas in Huehuetenango. The López family have been growing coffee for 38 years.
José has been pushing the quality of El Mirador through better pruning, fertilisation and shade management, and through investments in their wet milling processes. He has recently worked with semi-washed, honey and natural processing and modernized drying patios and raised drying beds.
We have picked a fantastic Microlot of only 9 bags. The coffee is fully washed and soaked with fresh water for 24 hours, then dried slowly on raised beds over 15 days.
The cup has a rich, creamy texture with very defined sweetness. Flavours of apricot, pecan pie and marshmallow. In the cooling we get yellow plum, brazil nuts and raw cacao.
Our coffees are roasted rather light to create a fully developed but very clean taste.
