We are starting our Guatemalan season with two great coffees and we are extremely happy to return to Bosques de San Francisco. This was one of the first coffees we worked with when we started our roastery in 2012.
Meanwhile Marta, the granddaughter of Francis Dalton, has become a dear friend and started a successful company, Coffee Bird. Surpassing established structures of commodity traders, Marta handpicked a selection of great farmers that she works with to bring up their quality and connects them with roasters that appreciate their qualities.
This harvest brought out by far the best Bosques de San Francisco that we have tasted. With notes of hazelnut covered in sugar cane, this lush coffee produces a sweet and creamy cup.
Improvements are coming from changed washing techniques. The coffee is now washed twice. Also the Daltons changed their tree strategy on the mountain to give the give plants more chances to thrive. New variatals such as Villa Sarchi and Geisha are being planted and tested on the farm.
Finca Filadelfia won Cup of Excellence in 2001 and 2002. It has been run by the Dalton family for 148 years and was the first coffee farm in Antigua. The passion for coffee has been passed down 6 generations.
The coffee region of Antigua spreads across a valley surrounded by three volcanoes, Agua (Water), Acatenango, and Fuego (Fire). The Fuego volcano is still under constant eruption and is noticeable by the clouds of smoke above its peak. The coffee grown in Antigua is enriched by the volcanic soil and tends to hold moisture well. The soil sets the tone for creating the right microclimate which is perfect for growing coffee.
We never blend any of our coffees and sell whole beans only to keep them as fresh as possible for you. All our coffees are fresh in season and of highest grading. We make it a point to pay a premium that enables our farmers to build a sustainable business and produce a high quality product in which they take great pride.
Our coffees are roasted rather light to create a fully developed but very clean taste.
