We are proud to introduce to you a new group of farmers called “Aromas del Sur” located in Palestina, Huila. The group was founded in 2013 and currently has 73 active members. The intention is to make every member of this group strong and to push qualities up to higher levels.
The average farm size is 6 hectares with an altitude range going from 1400 - 1900 meters. The varieties commonly found on the farms are: Caturra, Colombia, Castillo, Tipica, Red Bourbon, Pink Bourbon and Tabi. Producers harvest and mill their coffee following high quality standards; they do a selective hand picking of ripe cherries, ferment the coffee to adequate level and dry the coffee between 10% to 11.5% moisture content.
Aromas del Sur has a project called “Universidad del Café” (Coffee University) with a focus to teach and implement quality procedures among group producers. The goal of the project is to train the producers in agricultural practices, commercial knowhow and cupping ability.
Palestina, located in the south of Huila, is also known as Agua Azul (Blue Water) because it is considered as the main source of water for the department of Huila, having several water sources such as: Guarapas, Suaza, Aguas Claras, La Quebradona, Agua Azul and La Cumbre.
We never blend any of our coffees and sell whole beans only to keep them as fresh as possible for you. All our coffees are fresh in season and of highest grading. We make it a point to pay a premium that enables our farmers to build a sustainable business and produce a high quality product in which they take great pride.
Our coffees are roasted rather light to create a fully developed but very clean taste.
